Crockpot Creamed Corn with Bacon and Ham

A great tasting crockpot recipe that’s easy to make and full of flavor! Serve as a hearty side dish or an entree – either way, we guarantee it will delight!

Ingredients and Method

Ingredients

  • 32 oz. Frozen Corn Kernels
  • 6 Okra
  • 1 Red Bell Pepper
  • 6 Slices Burgers' Smokehouse Bacon (any flavor)
  • 1/2 cup Burgers' Smokehouse Cooked Ham, cubed
  • 6 oz. Cream Cheese
  • 1/2 cup Shredded Pepper Jack
  • 1 TBSP Butter
  • 3/4 cup Heavy Cream
  • 1 TBSP Brown Sugar
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 tsp. Cayenne
  • 1 tsp. Garlic Powder
  • 1/2 tsp Flour
  • Green Onions (for garnishing)

Method

  1. Chop up the red bell pepper (without seeds) and cut the okra into thick slices.
  2. Put all ingredients, except for the bacon and pepper jack, into the crockpot. Stir to make sure ingredients are roughly mixed.
  3. Set the crockpot to Low-Temperature setting and let cook for 2 ½ hours. Stir the crockpot occasionally.
  4. While the crockpot is cooking, put on a large skillet and cook the bacon until crispy. Pull off the bacon and set on paper towels to remove excess oil. Chop the bacon.
  5. Once the crockpot is done, add the bacon and pepper jack. Mix thoroughly.
  6. Pour the creamed corn into a serving dish or keep it in the crockpot on the warm cooking setting.
  7. Garnish with sliced green onions and serve.

Tips: Add bacon at the beginning or end of the crockpot cooking process. The difference is a preference of how crispy you want the bacon to remain in the dish. -- Room temperature corn kernels reduce the cooking process.
